Daniel Herget is the Executive Chef of Lido Bayside Grill at The Standard Spa, Miami Beach. Originally from Gainesville, Florida, Herget moved to Miami to study culinary and pastry arts at Johnson & Wales. Prior to joining Lido in 2018, Herget worked in the kitchens of top restaurants such as Wynwood Kitchen and La Goulue in Miami as well as Otaku Ramen and Little Octopus in Nashville. Herget signature style favors the bold dimensions of flavor found in Caribbean and Latin American cuisines. His light, fresh and vibrant approach often plays with refreshing citrus, pickling and fermentation. At Lido, all of Herget’s inventive dishes are made with local, seasonal produce and designed with the restaurant’s stunning waterside views in mind. His menu reflects the spa ethos of the property by accommodating diners with all kinds of preferences and restrictions.

What do you love most about Your City?

Honestly, the vibe. Miami is a city unlike any other and I think it’s because everyone is kind of doing their own thing and being themselves. So many different cultures, lifestyles, and ideologies coexisting makes for a vibe unlike anywhere else.

Favorite breakfast meal & restaurant?

My absolute favorite breakfast is a breakfast burrito. Spicy chorizo, scrambled eggs, cheese, and potatoes. It’s literally everything you could want rolled up into its own edible to-go packaging. I mean… c’mon! As far as restaurants for breakfast pinecrest bakery if i’m in a hurry and if i’m not then a late breakfast at Mason is hard to beat.

What are you doing at:

6:00 AM – Pretending I didn’t hear my alarm or see my dog staring at me.

10:00 AM – Finishing up at the gym and heading in to work.

12:00 PM – Favorite Power Lunch spot/meal?

My favorite power lunch is a croqueta preparada from enriqueta’s.

(Avocado Toast: sourdough, pickled onion, scallion ash, radish, sour orange Vegan)

7:00 PM – generally expediting or working on menu development.

11:00 PM – shutting down the kitchen, something almost therapeutic about it to this day.

Your post-work drink of choice?

If i go out it’s a trinidad sour. If I go straight home it’s a shower beer. More specifically a miller lite with a lot of lime in it.

Most used App/Favorite Instagram Account?

Most used app is for sure Spotify, I can’t function without my music. Favorite instagram account is a toss up between @dunksmushrooms and @houseplantclub

What should everyone try at least once?

Durian. I know there is a stigma about it, but I think it’s one of the most delicious things on the planet.

Where do you enjoy getting lost?

At the risk of sounding like a dweeb, conversation. I’m not a huge fan of being physically lost, but I think getting to really know another human being is fascinating..
