The history, the culture and the diversity found in Miami make it the perfect culinary canvas to explore, experience and create amazing food.
Favorite breakfast meal & restaurant?
Hmmm… I’m going to have to say I have a few different favorites, if that’s possible? Ackee & Saltfish with dumplings, green banana and yellow yam (Jamaican national dish) and secondly the Breakfast Poutine at Over Easy in Toronto.
What are you doing at:
6:00 AM – Out like a light
10:00 AM – Still trying to sleep, one eye open checking messages, emails etc. and trying not to make eye contact with my dog who’s waiting for me to feed her.
12:00 PM – Favorite Power Lunch spot/meal?
Popeyes? Spicy Chicken + fries + biscuit w/grape jelly
7:00 PM – Gearing up for the rush, expediting service
11:00 PM – Placing orders, making prep lists, trying to close the kitchen
What drink do you need to get through the day and at the end (and how many)?
One to two cups of black coffee to get through the day, either a glass of single malt scotch (preferably Macallan 18) or a glass of Sauvignon Blanc. It all depends on the mood.

I don’t like getting lost, my GPS usually doesn’t fail me.
