Favorite breakfast meal & restaurant?
My favorite breakfast meal typically involves chocolate chip pancakes that I made with my daughter, Isabella, and my son Gabriel. Breakfast with my family is something I wouldn’t miss for the world!
What are you doing at:
6:00 AM – I’m getting ready for my daily trip to the Farmers’ Market. One of my favorite farmers’ market is the Union Square Greenmarket.
10:00 AM – I get to the restaurant and show the produce I picked up at the Farmers’ Market with my team. We brainstorm and discuss the best ways to use and showcase these seasonal, local ingredients in our dishes.
12:00 PM – Favorite Lunch spot/meal?
There is a food cart around the corner from the restaurant, on Front Street, that makes delicious traditional Thai dishes. I love going there and picking up lunch from the cart. I sometimes run into regulars who live in the neighborhood. The walk and delicious lunch really energize me for the day. Plus, you never know who you will run into!
7:00 PM – I am in action in the open kitchen – I’m in my element, doing what I love!
11:00 PM – My team and I are wrapping up, thinking and talking about the next specials we want to offer.
What drink do you need to get through the day and at the end (and how many)?
A good espresso with the perfect crema. I’m also happy with a good glass of wine from Provence, where I grew up.
Where do you enjoy getting lost?
I love running on the waterfront in Brooklyn. I don’t get lost anymore but can’t get enough of the neighborhood and its beautiful views of the Manhattan skyline.
