Tawni Benick found her culinary beginnings in her hometown of Portland, OR, where she worked extensively in gluten-free and vegan fare. In 2013, Tawni was instrumental in opening the Portland health-food staple, Harlow, alongside the owner and Chef, where she worked as Sous Chef for two years. In 2015, Tawni relocated with her partner to Nashville, TN where she eventually became the Chef de Cuisine at The Post East, a gluten-free bakery, café, and light-fare restaurant nestled in the beautiful Lockeland Springs neighborhood of East Nashville. Tawni’s inspirations are rooted in tradition – from her family’s Italian heritage to the perfection and nuance of French baking – she believes food should be whole and articulate and that flavor and nutrition are not mutually exclusive. Tawni has traveled extensively throughout Western Europe, where she found solace in the time, delicacy, and scrupulousness devoted to the nourishment of the community. Tawni moved to NYC in August, 2017 and is now the Executive Chef for maman, where she executes a similar European sensibility of cuisine and culture in her food.

What do you love most about Your City?

I love being able to walk everywhere. Sometimes I will set off on foot without a specific goal or destination in mind, and just take in the architecture and explore new neighborhoods.

Favorite breakfast meal & restaurant?

Brooklyn: Olea–the olea breakfast plate (tzatziki, fattoush, eggplant salad, olives, onion and herb scrambled eggs and pita. sometimes i’ll get home fries on the side too!)

Portland: Sweedeedee–Egg Sandwich circa 2014 (Amazing house made bread, avocado, sharp white cheddar, Aioli, shaved lettuce, baked egg)

What are you doing at:

6:00 AM – Hitting snooze on my alarm clock

10:00 AM – On my 2nd cup of coffee, this time iced. Helping organize the walk-in from deliveries, or prep for lunch rush

12:00 PM – Favorite Power Lunch spot/meal?

Superiority Burger–1 Megamouth and the burnt broccoli salad

7:00 PM – Having drinks with my husband at one of our favorite patio bar spots in brooklyn, or cooking dinner at home

11:00 PM – (Hopefully) Asleep in bed with my cat Louis and husband Eric

What drink do you need to get through the day and at the end (and how many)?

One Hot americano to start, then usually a second, iced, coffee later. In the evening, either a craft

IPA beer (love you Bells Brewery) or a glass of Pinot Noir or Malbec…at least 2 or 3….
