What do you love most about Your City?
I love Miami for its diversity, great entertainment scene, growing culinary scene and of course the amazing weather and beautiful beaches.
Favorite breakfast meal & restaurant?
Amara at Paraiso for Brunch – their raw bar, rosé and the views of the bay are to die for.
What are you doing at:
6:00 AM – my husband is waking me up for breakfast, he always gets up before I do.
10:00 AM – heading to the gym for my morning workout, then to work. I’ll start by checking out the kitchen, walk-ins, discuss with my chefs on new dishes/specials and then begin working on emails in my office.
12:00 PM – Favorite Power Lunch spot/meal?
Milos has the best power lunch, plus it offers all healthy options.
Most of my meetings are scheduled in the afternoon with my FOH managers, department heads and vendors. After that I get with my chefs to prepare for dinner service, have family meal and check the kitchen line.
7:00 PM – dinner service begins and I like to expedite the pass and check every dish that leaves the kitchen.
11:00 PM – finish off the day with my team over a night cap or beer at the local bar.
What drink do you need to get through the day and at the end (and how many)?
American coffee in the morning, espresso during the day (at least 2), cup of chamomile tea before bed or vodka soda and lime if it’s the weekend.

Instagram (@fitchefsobe)! I have a decent following of over 90k. I have to stay pretty engaged with my followers, many of which ask me for cooking tips and fitness advice.

What should everyone try at least once?
Balut, Filipino dish of boiled fertilized duck egg with a fully developed embryo inside.
Where do you enjoy getting lost?
Wynwood and Design District, Miami. It has amazing spaces and lots of cool surprises around every corner.
