What do you love the most about your city?
The city itself.
But my greatest pleasure is to wander through it aimlessly. Curiosity is my guiding principle. I wander everywhere, through every neighbourhood- some of which boast such a richness of evolution, particularly the 10th, 11th and 19th arrondissements.
I love to walk in the early morning or late in the evening across the streets of Paris, and especially in the 6th Arrondissement, where my restaurant is located (La Monnaie de Paris).
Favorite breakfast meal and restaurant?
A tin of sardines… so long as there’s excellent grilled bread and good butter.
A tea and some ‘charcuteries’ with an excellent bread.
For this meal, I prefer to stay at home.
What are you doing at:
6:00 AM: Sleeping.
10:00 AM: Just before 10:00 AM, I’m in my kitchen, then in my office with my assistant to answer letters, email and calls of guests, producers, journalists…
12:00 PM – Favorite Power lunch spot / meal:
In the kitchen of my restaurant, looking at everyone and everything.
A quick meal, tasting the dishes of the day.
6:00 PM: Sport in my office (kung-fu)
7:00 PM: in my restaurant, to welcome the guests.
11:00 PM: in my restaurant, half with my guests and half with my team.
What drink do you need to get through the day and at the end (and how many)?
Up until 14:00, a litre of water with guarana and lemon juice.
After that, water and lemon juice.
In the evening, between one and five glasses of wine.

I live continuously in the present, the real world. I oversee and transform produce alongside my team and my clients.
What should everyone try at least once?
French gastronomy (food and wines).
Where do you enjoy getting lost?
In my dreams.
